Well day one has come and gone and you know what...I DIDN'T CHEAT!!!!!!!!!!!!!!!!!!!
There have been many temptations...like now (my kids are eating ice cream) and before when I was bagging up Cupid Poop and Cupid's Arrows for WTW (they are candy filled bags)...and still I didn't cheat...wanted to but didn't! GO ME!
Exercise for the day: Walmart walking for 2 hours. LOL I spend that long in walmart yes!
Soooo now for dinner...
I made Chicken Diane (and Kent's Special Green Beans) I've never made this before but I have to say OMG its good. When I was making it I thought to myself there is no way Baby Girl is going to eat this. So before I put the sauce on I told her to come taste it...she came over looked at it and looked at me and said "Mommy are you sure that's good?" I told her yes and that I liked it. She tasted it and gave me a look of pleasure. So I put it on her chicken and I'm surprised she didn't lick the plate clean. She actually asked me if I would please make it again when BD gets home...I wanted to cry.
So how do you make it you ask here is the recipe.

Chicken Diane:
4 boneless skinless chicken breast halves (4 ounces each)
1/2 teaspoon salt (we only use Kosher...has more flavor)
1/2 teaspoon pepper
2 teaspoons olive oil (I actually used 2 tablespoons and you'll find out why in a min)
2 teaspoons butter (I actually used 2 tablespoons and you'll find out why in a min)
1 tablespoon lemon juice
1 tablespoon minced fresh parsley (I used dry...cause I'm lazy...just as good)
2 teaspoons Dijon Mustard (I used 2 tablespoons and you'll find out why in a min)
1/4 cup reduced sodium chicken broth
3 tablespoons chopped green onions (I just eyeballed it)

Flatten chicken to 1/4 inch thickness (you dont have to just takes longer to cook); sprinkle both sides with salt and peeper. In a large nonstick skillet, brown chicken in oil and butter over med heat for 3-5 minutes (longer if you don't flatten) on each side or until juices run clear. Remove and keep warm. In the same skillet (DON'T DUMP JUICES..makes more sauce that's why I used more butter, mustard and oil), whisk the lemon juice, parsley and mustard until blended. Whisk in broth and green onions, heat through. Serve over chicken. Yield: 4 servings
Total Carbs per serving (one breast with 4.5 teaspoons sauce)= 1 CARB!!!!!!!!!!!

Kent's Special Green Beans:
Fresh green beans (not canned) as many as you'd like to cook...depends on how many people
Kosher Salt (NO REGULAR SALT!)
Pam cooking spray butter flavored

Boil Green Beans in med-large stock pot for 8-10 mins...depends on how soft you'd like them...we do 8 minutes. After 8 minutes remove from burner and drain. Leave in strainer, spray with Pam cooking spray until coated. Sprinkle Kosher Salt over Green Beans (Depends on salt but dint be greedy) and serve.
Total Carbs for Kent's Special Green Beans = 4.9 for 1/2 I had about 1/3 so 2.5

12oz Diet Root Beer

Total Carbs for Dinner= 3.5 CARBS
Total Carbs for entire day= less than 5 Carbs...SOOO EASY! And I've got a limit of 20!

I am so proud of myself for not cheating! I bought my dry erase board to put beside my treadmill and keep track of what I'm doing and for how long. I'm also going to write my goals and such on it to remind myself what I'm doing and why. If you try the chicken and or green beans let me know.
Well off to give the kids a bath watch a movie and go to bed...its been a long day and I've got 9 more ahead of me =o(.
